"The bergamot is elegant, the lemon energetic, the mandarin joyful. The orange is sunny and ironic. In the Italian town of Ivrea, not far from Turin, an orange battle is the highlight of the annual carnival festivities. In 1801, oranges became a symbol of military defeat when Prince Manuel Godoy y Álvarez de Faria sent his mistress, the queen, a basket of these fruits to celebrate Spain's victory over Portugal. This was avenged when, for many years afterward, oranges bore Portugal's name in the perfume industry. The oranges touted and sold by merchants accompany the tragic end of Carmen in Bizet's opera of the same name. But my favorite story takes place at Christmas. In December, oranges are a gift of light, a message announcing the end of winter, rebellious fruits that carry the color of summer." — Jean-Claude Ellena
